I can hardly believe it myself. But, with my grand kids at my hips, I cooked a nutritious brunch – Spinach Omelet. I even turned my oldest grand daughter into a fresh spinach eater … and like it. wpid-20150111_152209.jpg

Ingredients

  • fresh spinach
  • tomato basil feta cheese
  • chicken sausage
  • 4 cheese Italian blend
  • Eggland’s Best Eggs

Note: It only took 3 chicken sausage links to make 5 omelets. I hadn’t eaten chicken sausage before. In fact, I hadn’t made this before. Trying new things and experimenting is fun. Having Antuan (8) and Makayla (6) help was special. I wish I had taken pics of them. The kids and I had fun cooking and eating. Now to clean up … of course no one wants to. LOL

There is no real recipe, I just used things according to decent portions. 1 omelet = 1 egg. Oh and another added benefit to using the tomato basil feta and chicken sausage is that I didn’t have to add any seasoning. That’s right, no salt, no pepper, no Mrs. Dash.

What did I drink? Water. Ah, refreshing! (Shhh, don’t tell my family I said that. Normally I cannot drink water without a Propel packet added. Whew! I’m gettin’ good.
